Excerpt from Sheep: Their Breeds, Management, and Diseases Mutton has never been a favorite article of diet with Americans until within recent years - the wool-bearing breeds having given place to the more particularly mutton breeds of Great Britain. N ow, how ever, we are fast becoming, like the Mother Country, a mutton-eating people, and really good mutton commands remunerative, and Often very high, prices in all our markets. Occasionally, at certain seasons, there are large importations of heavy carcasses. The position of the sheep in our agriculture is not what it should be. Thousands of square miles of what is now waste land, in the midst of the longest settled parts of the country, might be used as sheep pastures, with the assurance of a triple profit in the wool, which should pay all expenses, in the mutton which might be set down in many cases as clear profit, and in the benefit to the land, which, under proper management, is always improved by the grazing of sheep upon it. This gives rise toa saying that for certain land the best practice is to manure with the sheep's foot. Besides, sheep are not fastidious feeders. They winter well on wheat or oat-straw, with a modicum of grain or other feed. Their maladies with us are gener ally easy to control, and when farms are adapted to their convenient handling, are managed with great economy of time and labor.
