Food additives, including colours, flavours and preservatives, are tested on animals in order to ascertain "safe" levels for human consumption. Most food additives, however, are tested in isolation. They're not tested in combination with other additives. The long term effects of consuming a combination of different additives are not currently known. Any packaged ingredients used in recipes within this book are obtainable (in Australia) without the "numbers". Of course, if you're not concerned about the additives in your food and purchase products with "numbers", it won't effect the end result of any of these recipes. The choice is yours. The recipes in this book really are for everyday people in everyday kitchens. We are not chefs and we don't expect you to be, either. We do, however, enjoy tasty meals prepared and presented with care. Even though we have lives outside of our kitchens we really do prepare this food for our families, in our far-from-perfect domestic kitchens. Recipes in Everyday Eating, designed as the first book in a series, are all able to be prepared using quite basic kitchen equipment.
